Rubicon Coffee, nestled in Paonia, Colorado, started its journey in collaboration with a local baker and winemaker. We established a retail spot where customers could savor our coffee, delight in a homemade pastry, and soak in the breathtaking view. And what a view it is!

The imposing Mount Lamborn and Landsend served as our backdrop as we set up shop. Patrons could observe coffee beans being roasted in the Diedrich 2.5kg roaster. This small batch roaster could produce about 15 pounds of finely roasted coffee per hour.

However, we soon outpaced the capacity of the 2.5 kg roaster. In 2021, we upgraded to a Diedrich IR 12 kg roaster. A significant leap forward, this roaster can churn out 92 pounds of coffee per hour. That's a substantial amount of coffee! Diedrich roasters are renowned in the industry for their reliability, consistency, and quality, and they certainly live up to their reputation.

At Rubicon Coffee, we offer an authentic coffee roastery experience. Customers can enjoy a complimentary cup of joe, witness the roasting process firsthand, and participate in sensory events like cupping new coffees.
